Arise and Learn

January is National soup month so for this week I am going to put some different soup recipes for everyone to try. I love this because there is nothing like a nice bowl of soup on a cold winter day, add some rhodes rolls and you are set for a perfect dinner!

Potato Cheese Soup
1 cube margarine
1 onion sliced
salt and pepper to taste
4 potatoes-cubed
2 cup water
2 cups milk
1 lb Velveeta cheese, cubed

In large saucepan melt 1 cube margarine. Cook onions on low het until tender. Add water and cook potatoes until done, do not overcook. Add 2 cups milk and velveeta , simmer on low (do not let it boil)- you can also add frozen vegetables if you want. Enjoy
